Ingredients

  • 1 Medium zucchini
  • 4 Eggs
  • 1 tbsp Chopped parsley
  • 1 tbsp Olive oil
  • to taste Salt & pepper

Cooking Steps

  1. Grate zucchini and squeeze out excess liquid.

  2. Whisk eggs with herbs, salt, and pepper.

  3. Stir in zucchini.

  4. Pour into an oiled pan and cook over low heat or bake at 180°C until set.

Plant & Growing Tips

Zucchini

  • Sow seeds directly into warm soil after the last frost, or start indoors 3-4 weeks prior for an earlier harvest.
  • Provide full sun (6-8 hours daily) and rich, well-drained soil with consistent moisture.
  • Give plants ample space, at least 60-90 cm (2-3 feet) apart, as they can grow quite large.

Parsley

  • Sow parsley seeds directly in spring or fall, or plant seedlings after the last frost; it prefers cooler weather.
  • Choose a spot with partial shade and rich, consistently moist soil to prevent bolting.
  • Parsley can be grown successfully in containers, making it easy to move indoors during winter.

Natural Pest Control

  • Inspect zucchini plants regularly for squash bugs and their eggs, scraping eggs off leaves and hand-picking adults.
  • Use floating row covers over young zucchini plants to deter vine borers and squash bugs early in the season.
  • Encourage beneficial insects like ladybugs to control aphids on parsley by planting diverse flowers nearby.

Harvest

Zucchini

  • Harvest zucchini when they are small to medium-sized (15-20 cm or 6-8 inches long) and tender, as larger ones become seedy.
  • Cut the stem with a sharp knife, leaving a small piece attached to the fruit.
  • Check plants daily during peak season, as zucchini grow very quickly, and overripe fruit can reduce future yields.

Parsley

  • Begin harvesting parsley leaves once the plant has established a good base of growth, by cutting outer stems near the base.
  • Use a 'cut-and-come-again' method to encourage continuous production, never taking more than a third of the plant at once.
  • Harvest before the plant flowers (bolts), as leaves become bitter once flowering begins.
