Sweet Potato & Black Bean Tacos
Smoky roasted sweet potato and black beans in wholegrain tortillas: a hearty, fibre-rich meat-free taco.

Ingredients
- 2 sweet potatoes, cubed
- 400g black beans, drained
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tbsp olive oil
- 6 wholegrain or corn tortillas
- To serve: avocado, red cabbage, lime, coriander
- Salt & pepper
Cooking Steps
Roast the sweet potato with olive oil and spices at 200°C (400°F) for 25 minutes.
Warm the black beans with a little cumin.
Fill warmed tortillas with sweet potato and beans.
Top with avocado, shredded cabbage, coriander and a squeeze of lime.
Optional Enhancements

Sweet Potatoes
- Plant slips in full sun after the last frost, in well-drained, sandy soil.
- Ensure consistent moisture, especially during tuber formation, and mound soil around the base to encourage more growth.
Red Cabbage
- Sow seeds indoors 4-6 weeks before the last frost or direct sow in cool weather, providing full sun and rich, moist soil.
- Space plants 18-24 inches apart to allow for proper head development.
Lime
- Grow lime trees in large containers in full sun, bringing them indoors when temperatures drop below freezing.
- Provide consistent watering and well-draining soil, fertilizing regularly during the growing season.
Coriander
- Sow seeds directly in cool weather, as coriander bolts quickly in heat; choose a spot with partial shade in warmer climates.
- Keep the soil consistently moist to encourage lush leaf growth.
Natural Pest Control
- Protect young cabbage plants from cabbage worms by covering them with fine mesh row covers.
- Hand-pick sweet potato weevils and practice crop rotation to prevent their buildup.
- Spray aphids on coriander and other plants with a strong stream of water or a mild insecticidal soap.
Harvest
Sweet Potatoes
- Harvest when leaves start to yellow and die back, typically 90-120 days after planting slips.

Red Cabbage
