Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 3.

Ingredients

  • 500g chicken thighs, boneless and skinless
  • 2 tbsp teriyaki sauce
  • 300g broccoli florets
  • 200g edamame, shelled
  • 500g baby potatoes, halved
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • Salt and pepper to taste

Cooking Steps

  1. Preheat the air fryer to 200°C (400°F).

  2. In a bowl, toss the halved baby potatoes with a drizzle of olive oil, salt, and pepper. Place them into the air fryer basket and cook for 10 minutes, shaking halfway through.

  3. After 10 minutes, add the teriyaki chicken thighs to the basket with the potatoes and cook for an additional 10 minutes, flipping the chicken halfway through.

  4. While the chicken and potatoes are cooking, in a separate bowl, combine broccoli florets and edamame with sesame oil, salt, and pepper.

  5. After the chicken has cooked for 20 minutes, carefully add the broccoli and edamame mixture to the basket and cook for another 6 minutes until the broccoli is vibrant and tender.

  6. During the last minute of cooking, sprinkle sesame seeds over the chicken and veggies to toast them slightly.

  7. Once done, let the chicken rest for 5 minutes before slicing. In the meantime, you can plate the potatoes, chicken, and vegetables beautifully.

Optional Enhancements

  • Use tofu instead of chicken for a vegetarian option.
  • Swap out edamame for snap peas or green beans.
  • Replace teriyaki sauce with a homemade soy sauce mix.

Plant & Growing Tips

Broccoli

  • Sow seeds indoors 6-8 weeks before the last frost, or direct sow in late summer for a fall crop.
  • Requires full sun and rich, consistently moist soil; avoid letting plants dry out.

Edamame

  • Direct sow seeds after all danger of frost has passed and soil has warmed, spacing plants 4-6 inches apart in full sun.
  • Edamame thrives in well-drained soil with consistent moisture, especially during flowering and pod development.

Potatoes

  • Plant certified seed potatoes in well-draining, fertile soil in full sun after the last frost.
  • Hill up soil around the stems as plants grow to protect developing tubers from sunlight.

Natural Pest Control

  • Cover young broccoli plants with fine mesh netting to deter cabbage worms and other flying pests.
  • Hand-pick Colorado potato beetles and their larvae from potato plants regularly.
  • Spray aphids on edamame and broccoli with a strong jet of water or use insecticidal soap.

Harvest

Broccoli

  • Cut the central head when it is firm and tight, before florets begin to separate or yellow.
  • Leave the plant in place after cutting the main head, as it will often produce smaller side shoots for continued harvest.

Edamame

  • Harvest pods when they are plump and bright green, before they start to yellow, typically 75-90 days after planting.
  • Pick the entire stalk or individual pods when beans are fully developed inside.

Potatoes

  • Harvest new potatoes about 7-8 weeks after planting, or wait until foliage dies back for mature storage potatoes, typically 90-120 days.
  • Dig gently to avoid piercing the tubers.

Storing & Freezing

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best texture.
