Cooking Steps

  1. Prep vegetables

    Grate carrots; chop onion, peppers, garlic, and tomatoes.

  2. Sauté aromatics

    Fry onion, garlic, and chili (if using) until fragrant.

  3. Add vegetables

    Add grated carrots and chopped peppers; cook until softened.

  4. Season

    Stir in curry powder, paprika, salt, pepper.

  5. Add tomatoes

    Simmer until tomatoes break down and sauce thickens.

  6. Add beans

    Stir in cooked beans; simmer 5–10 minutes.
