Ingredients

  • 3 eggs
  • 1/2 cup sliced mushrooms
  • 1 tbsp olive oil
  • 1 tbsp chopped chives or parsley
  • Salt & pepper

Cooking Steps

  1. Heat the olive oil in a nonstick pan over medium heat. Add the sliced mushrooms and saute for 4-5 minutes, stirring occasionally, until golden and any liquid has evaporated.

  2. Meanwhile, whisk the eggs in a bowl with a small pinch of salt and pepper until fully combined.

  3. Pour the eggs into the pan with the mushrooms and reduce the heat to low.

  4. Scramble gently with a spatula, pushing the eggs from the edges to the centre, for 2-3 minutes until softly set but still a little glossy.

  5. Stir through the chopped chives or parsley in the last few seconds of cooking.

  6. Serve immediately while hot.
