Plant & Growing Tips

Chives

  • Not in the recipe, but grow chives for a fresh, oniony garnish that brightens up rich egg and beef dishes.
  • Chives prefer full sun to partial shade and well-drained soil; they are also excellent for container growing.
  • Plant chive bulbs or seeds in early spring, and they will reliably return year after year.

Rocket (Arugula)

  • Not in the recipe, but grow rocket for a peppery side salad that cuts through the richness of the main dish.
  • Rocket thrives in cooler weather and prefers partial shade in hot climates to prevent bolting.
  • Sow seeds directly in spring or late summer for continuous harvests.

Natural Pest Control

  • Spray aphids off chives with a strong jet of water to dislodge them.
  • Use floating row covers for young rocket plants to deter flea beetles.
  • Hand-pick slugs from rocket leaves, especially in the evening or after rain.
  • Plant marigolds nearby to deter various garden pests from both chives and rocket.

Harvest

Chives

  • Snip chive leaves with scissors about an inch or two from the ground, leaving enough for regrowth.
  • Harvest regularly to encourage continuous production of tender leaves.
  • If chives are left to flower, the stems can become tougher, but the flowers are also edible and attractive.

Rocket (Arugula)

  • Harvest rocket by picking individual outer leaves when they are young and tender, or by cutting the whole plant a couple of inches from the ground for regrowth.
  • Regular harvesting encourages more tender leaves and prolongs the growing season.
  • If rocket is left to bolt (flower), its leaves will become much spicier and more bitter.
