Ingredients
- 500g salmon fillet, finely chopped
- 1 spring onion, sliced
- 1 tbsp dill, chopped
- Zest of 1 lemon
- 1 tsp mustard
- 1 egg
- Salt & pepper
- 1 tsp olive oil
Cooking Steps
Mix the chopped salmon with spring onion, dill, lemon zest, mustard, egg and seasoning.
Shape into 4 patties and chill 15 minutes.
Pan-fry in a little olive oil 3–4 minutes each side.
Serve in wholegrain buns with salad and yogurt-lemon sauce.

Plant & Growing Tips
Spring Onion
- Sow seeds directly in early spring in well-drained soil, about 1 inch apart and 1/4 inch deep.
- Spring onions prefer full sun and consistent moisture for tender, flavorful growth.
- For a continuous harvest, successionally sow small batches of seeds every 2-3 weeks.
Dill
- Direct sow dill seeds in full sun after the last frost, as dill does not transplant well.

Natural Pest Control
- Protect young spring onion plants from onion maggots by covering them with a fine mesh row cover immediately after planting.
- Hand-pick any parsleyworms (swallowtail caterpillars) from dill plants, relocating them to feed on other host plants like parsley or fennel if available.
- Use a strong spray of water to dislodge aphids from both spring onions and dill, or apply a diluted neem oil solution.

- Harvest spring onions when their stalks are about pencil-thin by gently pulling the entire plant from the soil.
Dill
- Snip outer leaves of dill as needed once the plant is about 6 inches tall; harvest entire plants before they flower for the best leaf flavor.
