Pork Chops in Beef Fat
Juicy pork chops seared in hot beef tallow. A simple, satisfying carnivore dinner.

Ingredients
- 2 Pork chops
- 1 tbsp Beef fat or tallow
Cooking Steps
Take the pork chops out of the fridge 10 minutes before cooking and pat them dry.
Melt the beef fat or tallow in a heavy frying pan over medium-high heat until shimmering.
Season the chops with salt and pepper, then sear for 4 minutes on the first side without moving them.
Flip and cook for a further 4 minutes, or until a meat thermometer reads 63C (145F) at the thickest point.
Rest for 3 minutes before serving; the residual heat will bring them the rest of the way.
