Plant-Based Coconut Water Kefir

Ingredients

  • 1 tbsp water kefir grains
  • 2 cups coconut water (no additives, no preservatives)

Cooking Steps

  1. Place water kefir grains into a clean glass jar.

  2. Pour coconut water over the grains.

  3. Cover loosely with a breathable cloth or lid.

  4. Ferment at room temperature for 24–48 hours.

  5. Strain out grains and refrigerate finished kefir.

  6. Reuse grains immediately or store according to care instructions.

Plant & Growing Tips

Strawberries

  • Not in the recipe, but grow them to add fresh sweetness to your kefir.
  • Plant in full sun in well-drained soil or containers, ensuring consistent moisture.
  • Mulch around plants to keep berries clean and suppress weeds.

Mint

  • Not in the recipe, but grow it for a refreshing garnish to your kefir.
  • Plant in a pot to prevent its vigorous spread, thriving in partial shade to full sun with consistent moisture.

Natural Pest Control

  • Slugs and snails can be deterred from strawberries with beer traps or copper tape.
  • Birds can be excluded from ripening strawberry fruits using netting.
  • Aphids on mint can be sprayed off with a strong jet of water.

Strawberries

  • Pick when fully red and firm, usually in the morning after dew has dried, to encourage more production.

Mint

  • Snip off sprigs as needed, cutting just above a leaf node to encourage bushy growth.

Storing & Freezing

Finished kefir: Refrigerate up to 5 days. Water kefir grains: Store in sugar water in fridge for up to 2 weeks.
