A vibrant air-fried medley of succulent Mediterranean chicken topped with tangy feta, briny olives, and roasted cherry tomatoes served alongside crispy baby potatoes for a wholesome dinner experience.
Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 4.
Ingredients
- 500g chicken breast, cubed
- 250g baby potatoes, halved
- 100g cherry tomatoes
- 50g feta cheese, crumbled
- 75g pitted olives, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Cooking Steps
Preheat the air fryer to 200°C (400°F).
In a bowl, toss the halved baby potatoes with 1 tbsp olive oil, salt, pepper, and half the oregano. Place them in the air fryer basket and cook for 10 minutes.
While the potatoes are cooking, season the cubed chicken with the remaining olive oil, garlic powder, oregano, salt, and pepper. After the 10 minutes, shake the potato basket and add the chicken on top of the potatoes. Cook for an additional 10 minutes.
After 10 minutes, gently shake the basket again and add the cherry tomatoes on top of the chicken and potatoes. Cook for 5 more minutes.
In the last 5 minutes of cooking, add the olives to the basket.
Once done, carefully remove the basket and let the chicken rest for 5 minutes.
Plate the dish by arranging the chicken, potatoes, cherry tomatoes, and olives. Sprinkle crumbled feta on top and garnish with fresh parsley.
Optional Enhancements
- Chicken breast can be swapped for chickpeas for a vegetarian option.
- Feta can be replaced with goat cheese for a different flavor.
- Olives can be omitted or replaced with capers for a saltier kick.
Plant & Growing Tips
Potatoes
- Plant seed potatoes in well-drained soil after the last frost, about 4-6 inches deep.
- As plants grow, 'hill' soil around the stems to encourage more tuber formation and prevent greening.
- Potatoes can be grown successfully in large containers or grow bags.
Cherry Tomatoes
- Provide full sun (at least 6-8 hours daily) and consistent watering for best fruit production.
- Support plants with stakes, cages, or trellises to keep fruit off the ground and improve air circulation.
- Ensure good air circulation to prevent fungal diseases, especially in humid climates.
Parsley
- Sow seeds in spring or autumn in a spot with partial shade and consistently moist, rich soil.
- Parsley is well-suited for container growing, making it easy to keep near the kitchen.
- Water regularly to keep the soil moist, but avoid waterlogging.
Natural Pest Control
- Check potato plants regularly for Colorado potato beetles and hand-pick them off.
- Use row covers over young tomato plants to protect them from early insect pests.
- Spray parsley with a strong jet of water to dislodge aphids, or use neem oil as an organic deterrent.
Harvest
Potatoes
- Harvest new potatoes when plants begin to flower, or wait for larger tubers when the foliage yellows and dies back.
- Carefully dig around the plants to avoid damaging the tubers, then let them cure in a cool, dark place for a few days.
Cherry Tomatoes
- Pick cherry tomatoes when they are fully colored and firm to the touch, easily detaching from the vine.
- Harvest frequently to encourage more fruit production throughout the growing season.
- If left too long, ripe tomatoes can split or become soft.
Parsley
- Snip outer stems close to the base of the plant to encourage continuous new growth.
- Harvest leaves as needed, avoiding cutting more than one-third of the plant at a time.
- Regular harvesting helps prevent the plant from bolting (going to seed).
Storing & Freezing
Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for best results.
