Korean Sticky Gochujang Tofu Bowl with Roasted Sweet Potato and Broccoli
Savor the bold, spicy-sweet flavors of marinated tofu paired with perfectly roasted sweet potatoes and vibrant broccoli, creating a deliciously healthy meal.
Ingredients
- 1 block firm tofu, pressed and cubed
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- 1 large sweet potato, diced into 1-inch cubes
- 2 cups broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish
- Chopped green onions for garnish
Cooking Steps
1. Preheat the air fryer to 200°C (400°F).
2. In a bowl, mix gochujang, soy sauce, maple syrup, and sesame oil to make the marinade. Toss the cubed tofu in the marinade and let it sit for 10 minutes.
3. Add the diced sweet potatoes to the air fryer basket and drizzle with olive oil, salt, and pepper. Air fry for 10 minutes, shaking halfway through.
4. After 10 minutes, add the marinated tofu on top of the sweet potatoes, and scatter the broccoli florets around. Air fry for an additional 12 minutes, shaking the basket after 6 minutes.
5. Once done, let the tofu rest for 3 minutes to allow the sauce to thicken slightly.
6. Plate the sweet potatoes, topped with the crispy gochujang tofu and roasted broccoli. Drizzle any remaining marinade from the basket over the top.
7. Garnish with sesame seeds and chopped green onions before serving.
Optional Enhancements
- Replace tofu with tempeh for a nuttier texture.
- Use cauliflower instead of broccoli for a different vegetable option.
- Substitute maple syrup with agave syrup or honey (if not strictly vegan).

Sweet Potato
- Plant slips after the last spring frost once soil has warmed, in full sun and well-draining soil.
- Provide a long, warm growing season, typically 90-150 days, for tubers to develop fully.
- Space slips about 30 cm apart in rows, allowing vines to spread or grow up a trellis.
Broccoli
- Sow seeds indoors 6-8 weeks before the last frost, or direct sow in cool weather.
- Requires full sun and consistently moist, rich soil to produce large heads.
- Space plants 30-60 cm apart to allow for proper head development and air circulation.
Green Onions
- Plant seeds or sets in early spring or late summer, or grow from the white ends of store-bought scallions.
- They thrive in full sun to partial shade with consistently moist, well-draining soil.
- Can be grown densely in pots or garden beds, as they don't require much space for root development.
Natural Pest Control
- Protect broccoli from cabbage worms by covering young plants with fine mesh row covers.
- Hand-pick any sweet potato weevils you find and practice crop rotation to prevent their buildup.
- Use a strong spray of water to dislodge aphids from green onion leaves, or introduce ladybugs.
Harvest
Sweet Potato
- Harvest before the first hard frost, typically when leaves start to yellow and die back.
- Carefully dig up tubers to avoid bruising, allowing them to cure in a warm, humid place for optimal flavour.
Broccoli
- Cut the central head when it is firm and tight, before the florets begin to separate or show yellow.
- Continue to harvest smaller side shoots that develop after the main head is removed.
Green Onions
- Snip outer leaves as needed for a continuous supply, or pull entire plants when they reach your desired size.
- If cut an inch or two above the soil line, the bulbs will often regrow several times.
Storing & Freezing
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 1 month. Reheat in the air fryer or microwave.
