Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 2.

Ingredients

  • 2 chicken breasts
  • 1 can coconut milk
  • 1 carrot
  • 1 cup spinach
  • 1 tbsp curry powder
  • 1 tbsp coconut oil
  • 1 garlic clove

Cooking Steps

  1. Sauté chicken with garlic and sliced carrots in coconut oil.

  2. Stir in curry powder and coconut milk.

  3. Simmer with spinach until thick. Serve hot.

Plant & Growing Tips

Carrot

  • Sow seeds directly in well-drained, stone-free soil after the last frost for straight roots.
  • Keep soil consistently moist, especially during germination, to prevent splitting and bolting.
  • Thin seedlings to 2-4 inches apart for proper root development and good air circulation.

Spinach

  • Plant seeds in early spring or late summer, as spinach prefers cool weather and can bolt in heat.
  • Provide consistent moisture and partial shade in warmer climates to prevent premature flowering.
  • Spinach grows well in containers, requiring at least 6 inches of soil depth.

Garlic

  • Plant individual cloves point-up in well-drained soil in autumn for a summer harvest, or in early spring in colder climates.
  • Ensure full sun exposure and good air circulation to prevent fungal issues.
  • Mulch heavily over winter to protect autumn-planted cloves from hard freezes.

Natural Pest Control

  • Carrot Rust Fly: Cover carrot beds with fine mesh netting immediately after sowing to prevent flies from laying eggs.
  • Aphids: Spray spinach and garlic plants with a strong stream of water or an insecticidal soap solution to dislodge and kill aphids.
  • Slugs & Snails: Use beer traps or copper tape barriers around spinach plants to deter slugs and snails.

Harvest

Carrot

  • Harvest when roots are at least 1/2 inch in diameter at the soil line, pulling gently when the soil is moist.
  • Leaving carrots in the ground too long can make them woody and less flavorful.

Spinach

  • Begin harvesting outer leaves when they are large enough to eat, allowing inner leaves to continue growing for a cut-and-come-again harvest.
  • Harvest before plants bolt (send up a flower stalk) for the best flavor and texture.

Garlic

  • Harvest when the bottom two or three leaves have turned yellow, but while most of the upper leaves are still green.
  • Dig up bulbs carefully to avoid bruising and cure them in a warm, dry, shaded place for 2-4 weeks before storing.
