Ingredients

  • 3 Boiled eggs
  • 50 g Beef jerky (no sugar)

Cooking Steps

  1. Place the eggs in a small pan of cold water, bring to the boil, then simmer for 9-10 minutes for a fully firm yolk.

  2. Drain and cool under cold running water for a minute, then peel.

  3. Halve or quarter the eggs and arrange on a plate with the beef jerky alongside.

  4. Serve at room temperature; this travels well for a portable lunch.

Plant & Growing Tips

Chives

  • Not in the recipe, but grow chives to add a mild oniony freshness to the eggs.
  • Plant chives in full sun to partial shade in well-drained soil.
  • They grow well in pots and can be divided every few years to rejuvenate.

Parsley

  • Not in the recipe, but grow parsley for a fresh, herbaceous garnish.
  • Sow seeds in spring or autumn, keeping soil moist until germination, which can be slow.
  • Choose a spot with partial shade in hot climates to prevent bolting.

Natural Pest Control

  • Spray chives with a strong jet of water to dislodge aphids if they appear.
  • Use companion planting with marigolds near parsley to deter nematodes and other pests.
  • Hand-pick slugs and snails from young parsley plants.

Harvest

Chives

  • Snip leaves from the base of the plant with scissors, leaving about an inch for regrowth.

Parsley

  • Harvest outer stems at the base of the plant to encourage new growth from the centre.
