Ingredients

  • 200 g Ground lamb
  • 2 Eggs
  • to taste Salt (optional)

Cooking Steps

  1. Divide the ground lamb into two portions and shape into patties about 1.5cm thick. Season with salt, if using.

  2. Heat a frying pan over medium-high heat (no extra fat needed, lamb renders its own).

  3. Cook the patties for 3-4 minutes per side, until well browned and cooked through.

  4. Transfer the patties to a plate and keep warm, leaving the rendered lamb fat in the pan.

  5. Crack the eggs into the same pan and fry in the lamb fat to your liking, about 2-3 minutes for a runny yolk.

  6. Serve the eggs alongside the lamb patties.

Plant & Growing Tips

Mint

  • Not in the recipe, but grow mint for a fresh garnish to complement the lamb patties.
  • Plant mint in a pot to contain its vigorous spreading habit.
  • Provide partial shade in hot climates and keep soil consistently moist.

Rocket (Arugula)

  • Not in the recipe, but grow rocket for a peppery side salad to cut the richness.
  • Sow seeds directly in spring or autumn in well-drained soil.
  • Give plants at least 6 inches of space for good air circulation.

Natural Pest Control

  • Hand-pick slugs and snails from young rocket plants, especially after rain.
  • Use row covers to protect young rocket from flea beetles, which chew small holes in leaves.
  • Check mint for spider mites; spray with a strong stream of water or insecticidal soap.

Harvest

Mint

  • Snip leaves or stems as needed, ideally before flowering for the best flavour.

Rocket (Arugula)

  • Harvest outer leaves when they are 2-4 inches long for a cut-and-come-again supply.
