Freezer Breakfast Burrito Batch
Eight wholegrain breakfast burritos (eggs, black beans, peppers and cheese) wrapped and frozen for grab-and-go mornings.
Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 8.

Plant & Growing Tips
Peppers
- Plant seedlings in full sun after all danger of frost has passed and soil has warmed.
- Provide consistent moisture and support for heavy-fruiting varieties.
Red Onion
- Plant onion sets or seeds in full sun in well-drained soil as soon as the ground can be worked in spring.
- Ensure good air circulation to prevent fungal diseases.
Black Beans
- Sow seeds directly after the last frost when soil temperatures are consistently warm, providing support for vining varieties.
- Avoid disturbing plants when wet to prevent the spread of fungal diseases.
Natural Pest Control
- Spray pepper plants with a strong stream of water to dislodge aphids or use insecticidal soap.
- Practice crop rotation and avoid planting onions in the same spot year after year to deter onion maggots.
- Inspect bean pods regularly and harvest promptly to prevent bean weevil infestations.
Harvest
Peppers
- Harvest when fruits are firm, fully colored for the variety, and reach a desired size.
- Cutting peppers with a sharp knife or shears rather than pulling helps prevent damage to the plant.
Red Onion
- Harvest when leaves begin to yellow and fall over, then cure in a dry, airy place for storage.
- Leaving them too long in the ground can cause rotting or splitting.
Black Beans
- Allow pods to fully dry on the plant until they are brittle and the beans rattle inside, then shell them.
- Harvest before pods split open and scatter the beans.
Storing & Freezing
Freezer 2 months. This is the classic freezer prep. Reheat until piping hot throughout; don't refreeze once thawed.
