Ingredients
- 1 medium eggplant
- 1/2 cup sugar-free tomato sauce

Cooking Steps
Slice eggplant into rounds and brush with oil.
Roast at 200°C (400°F) for 15 minutes.
Top with tomato sauce and cheese, return to oven until melted.
