Plant & Growing Tips
Strawberries
- Not in the recipe, but grow them for a fresh, sweet topping to your ice cream.
- Plant bare-root strawberry plants in early spring in full sun and well-drained, fertile soil.
- Ensure consistent moisture, especially during fruit development, and protect from birds as berries ripen.
Mint
- Not in the recipe, but grow it for a refreshing garnish to complement the sweetness of the ice cream.
- Plant mint in a pot to contain its vigorous spreading, in partial shade to full sun with consistently moist soil.
- Pinch back regularly to encourage bushy growth and prevent flowering, which can diminish flavor.
Natural Pest Control
- Protect ripening strawberries from birds by covering plants with netting.
- Hand-pick slugs and snails from strawberry plants, especially after rain, or use beer traps.
- Spray mint with a strong jet of water to dislodge aphids if they appear.
Harvest
Strawberries
- Harvest when berries are fully red, fragrant, and easily detach from the plant.
- Pick them with a short stem attached to improve shelf life and avoid bruising.
Mint
- Harvest leaves as needed by pinching off stems just above a leaf node, which encourages bushier growth.
- Pick before plants flower for the best flavor, as flowering can make leaves bitter.
Storing & Freezing
Freeze up to 2 weeks.
