Plant & Growing Tips
Cauliflower
- Sow seeds indoors 4-6 weeks before the last frost, or direct sow outdoors after the danger of frost has passed.
- Plant in full sun (at least 6 hours) and well-draining soil rich in organic matter.
- Maintain consistent moisture, especially as heads form, to prevent bolting and ensure tender growth.
Red Pepper
- Start seeds indoors 8-10 weeks before the last frost date, transplanting seedlings after all danger of frost is past.
- Provide full sun (6-8 hours daily) and rich, well-draining soil; peppers thrive in warm conditions.
- Support taller pepper plants with stakes or cages to prevent branches from breaking under the weight of fruit.
Avocado
- Grow from seed by suspending a pit over water, then transfer to a large pot with well-draining soil once roots and a stem appear.
- Provide ample sunlight and protection from frost; avocado trees require warm climates to thrive outdoors.
- Water deeply and regularly, allowing the topsoil to dry out slightly between waterings.
Lime
- Plant young lime trees in a large container with citrus potting mix, ensuring good drainage.
- Provide at least 8 hours of direct sunlight daily; bring indoors or protect during cold temperatures.
- Water regularly, keeping the soil consistently moist but not waterlogged, and fertilize with a citrus-specific feed.
Coriander
- Sow seeds directly in shallow drills in spring or autumn, spacing them to allow for good air circulation.
- Plant in a location with partial shade during hot afternoons to slow bolting, and keep the soil consistently moist.
- Coriander is great for containers; use wider pots to accommodate its shallow root system and sow successionally.
Natural Pest Control
- Use floating row covers for cauliflower to protect against cabbage worms and other brassica pests.
- Inspect pepper and coriander plants regularly for aphids and hand-remove them, or spray with insecticidal soap.
- Employ sticky traps to monitor and reduce populations of fruit flies and other flying pests around avocado and lime trees.
Harvest
Cauliflower
- Harvest when the head is firm, white, and 6-8 inches in diameter, before the curds begin to separate.
- Cut the main stalk just below the head, leaving a few protective leaves attached.
Red Pepper
- Pick peppers when they reach their mature size and desired color (red for this recipe), using a sharp knife or shears.
- Harvest frequently to encourage more fruit production throughout the growing season.
Avocado
- Avocados do not ripen on the tree; pick mature fruits when they are full-sized, then allow them to soften at room temperature.
- Gently squeeze the fruit; it should yield slightly when ripe.
Lime
- Harvest limes when they are full-sized, firm, and have turned a bright green color, typically taking 3-6 months to ripen.
- Snip the fruit from the branch with clippers, leaving a small piece of stem attached.
Coriander
- Snip outer leaves and stems as needed once the plant is a few inches tall, using the cut-and-come-again method.
- Harvest before the plant bolts (sends up a flower stalk) as the leaves become bitter afterwards.
Storing & Freezing
Best fresh; components keep 3 days.
