Ingredients

  • 2 boiled eggs
  • 1 tbsp olive tapenade (black olives, garlic, olive oil)
  • Fresh parsley

Cooking Steps

  1. If starting from raw eggs: place in a pan of cold water, bring to the boil, then simmer for 8-10 minutes for firm yolks. Drain and cool under cold running water before peeling.

  2. Halve the peeled boiled eggs lengthways.

  3. Spoon the olive tapenade over the cut side of each egg half.

  4. Finish with a scatter of fresh parsley and a small pinch of black pepper.

  5. Serve chilled or at room temperature.
