Beetroot & Lentil Burgers
Deep-red, earthy-sweet veggie burgers bound with lentils and oats — colourful, filling and iron-rich.

Ingredients
- 2 cooked beetroot, grated
- 400g cooked lentils
- ½ cup rolled oats
- 1 small onion, grated
- 1 tsp cumin
- 1 egg (or flax egg)
- Salt & pepper
- 1 tsp olive oil
Method
- 1
Mash the lentils with the grated beetroot.
- 2
Mix in the oats, onion, cumin, egg and seasoning.

Shape into 4 patties and chill 15 minutes.

Bake at 200°C (400°F) for 25 minutes, turning once.

Serve in wholegrain buns with yogurt-herb sauce.
