Ingredients
- 4 chicken thighs, boneless and skinless
- 1/4 cup BBQ sauce
- 500g baby red potatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 300g broccoli florets
Cooking Steps
1. Preheat the air fryer to 200°C (400°F).
2. In a bowl, toss the halved baby red potatoes with olive oil, garlic powder, paprika, salt, and pepper.
3. Place the seasoned potatoes in the air fryer basket and cook for 10 minutes, shaking the basket halfway through.
4. While the potatoes are cooking, coat the chicken thighs with BBQ sauce, ensuring an even coverage.
5. After the potatoes have cooked for 10 minutes, add the BBQ chicken thighs on top of the potatoes and cook for 10 minutes.
6. After 10 minutes, add the broccoli florets around the chicken and potatoes, then cook for an additional 6 minutes.
7. Once cooked, let the chicken rest for 5 minutes, then drizzle with additional BBQ sauce before serving. Plate the chicken with potatoes and broccoli.
Optional Enhancements
- 1. Swap chicken thighs for chicken breasts for a leaner option.
- 2. Replace baby red potatoes with sweet potatoes for a sweeter flavor.
- 3. Use store-bought teriyaki sauce instead of BBQ sauce for a different twist.
Plant & Growing Tips
Potatoes
- Plant certified seed potatoes in early spring after the last frost, in deep, loose soil.
- "Hill up" soil around the growing plants as they grow to protect developing tubers from sunlight and encourage more potatoes.
- Ensure consistent watering, especially when flowers appear and tubers are forming, to prevent scab and cracking.
Broccoli
- Sow seeds indoors 6-8 weeks before the last frost or direct sow outdoors when soil warms in spring/late summer for a fall crop.
- Plant in rich, well-drained soil with full sun, spacing plants 18-24 inches apart.
- Keep soil consistently moist and provide a balanced fertilizer to support strong head development.
Natural Pest Control
- For Colorado potato beetles, hand-pick adults and larvae from potato plants and drop them into soapy water.
- For cabbage worms on broccoli, use row covers to prevent moths from laying eggs, or spray with Bt (Bacillus thuringiensis).
- Slugs can be an issue for young broccoli, use beer traps or scatter crushed eggshells around the base.

Potatoes
- Harvest "new" potatoes about 7-8 weeks after planting when plants flower; for mature storage potatoes, wait until foliage dies back completely, usually 10-14 weeks.
Broccoli
- Cut the central head when it is firm, tight, and dark green, before individual florets start to yellow or open; leaving it too long will cause it to bolt.
- After cutting the main head, leave the plant in the ground as it will often produce smaller side shoots for subsequent harvests.
Storing & Freezing
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
