Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 4.

Ingredients

  • 500g chicken breast, cut into strips
  • 1 egg, beaten
  • 1 cup almond flour
  • ¼ cup grated parmesan
  • 1 tsp paprika
  • Salt & pepper
  • Olive oil spray

Cooking Steps

  1. Preheat the oven to 200°C (400°F).

  2. Dip the chicken strips in egg, then coat in the almond flour, parmesan and paprika.

  3. Lay on a lined tray and mist with olive oil.

  4. Bake 18–22 minutes, turning once, until golden and cooked through.

  5. Serve with a yogurt dip.

Optional Enhancements

  • Wholemeal breadcrumbs instead of almond
  • Air-fry at 200°C for 12 minutes
  • Add cayenne for heat

Plant & Growing Tips

Lettuce

  • Not in the recipe, but grow it for a fresh, crisp side salad to balance the richness of the chicken.
  • Sow seeds directly in spring and autumn, or succession plant every few weeks for a continuous supply.
  • Provide partial shade in warmer climates to prevent bolting and keep leaves tender.

Cherry Tomatoes

  • Not in the recipe, but grow them for a burst of fresh, acidic flavour in a side salad or as a garnish.
  • Plant seedlings after the last frost in a sunny spot with well-draining soil.
  • Provide sturdy stakes or cages for support as the plants grow and bear fruit.

Natural Pest Control

  • Protect lettuce seedlings from slugs and snails using barriers like crushed eggshells or copper tape.
  • Hand-pick larger pests like tomato hornworms from cherry tomato plants in the early morning or evening.
  • Use row covers over young lettuce plants to deter aphids and other flying insects.

Harvest

Lettuce

  • Harvest outer leaves as needed for a cut-and-come-again crop, or cut the entire head when it reaches desired size.
  • Pick lettuce in the morning after the dew has dried for the best flavour and crispness.

Cherry Tomatoes

  • Harvest cherry tomatoes when they are fully coloured and feel slightly soft when gently squeezed.
  • Pick regularly to encourage the plant to produce more fruit, twisting gently to detach from the vine.

Storing & Freezing

Fridge up to 3 days; freeze cooked up to 2 months.
