Air-Fryer Sesame-Ginger Salmon Delight
A vibrant and healthy dish featuring tender sesame-ginger salmon, paired with sautéed bok choy and roasted sweet potato for a deliciously balanced dinner.
Estimated. Worked out from the ingredients using the UK food composition tables, so treat it as a guide rather than a measurement. A typical recipe lands within about a quarter of the true figure. Makes about 2.
Ingredients
- 2 salmon fillets
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 1 tablespoon honey
- 1 sweet potato, cut into wedges
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 cups bok choy, chopped
- Fresh sesame seeds for garnish
Cooking Steps
Preheat air fryer to 200°C (400°F).
In a bowl, mix soy sauce, sesame oil, grated ginger, and honey; marinate salmon fillets for at least 5 minutes.
Toss sweet potato wedges with olive oil and salt, then place them in the air fryer basket and cook for 15 minutes, shaking halfway at the 7-minute mark.
After 15 minutes, add the marinaded salmon fillets to the side of the sweet potatoes in the same basket. Cook for an additional 10 minutes, flipping the salmon halfway through at the 5-minute mark.
While the salmon and sweet potatoes cook, quickly stir-fry the bok choy in a separate pan on the stovetop with a splash of water for 2-3 minutes until just wilted; season lightly with salt if desired.
Once the air fryer timer goes off, remove the salmon and sweet potatoes and let the salmon rest for 2 minutes.
Plate the salmon on a bed of sautéed bok choy, add sweet potato wedges on the side, and sprinkle with fresh sesame seeds for garnish.
Optional Enhancements
- Replace salmon with chicken breast or tofu for a different protein.
- Use zucchini or broccoli instead of bok choy.
- Swap sweet potatoes for regular potatoes or quinoa.
Plant & Growing Tips
Ginger
- Plant rhizome pieces (with "eyes" or buds) in well-draining, rich soil in a warm, humid location, either in large pots or directly in the ground in tropical/subtropical climates.
- Keep soil consistently moist but not waterlogged, and protect from direct, harsh sun.
Sweet Potato
- Plant slips (sprouted tubers) in warm soil after all danger of frost has passed, ensuring plenty of space for vines to spread.
- Sweet potatoes require full sun and consistently moist soil, especially during tuber formation.
Bok Choy
- Sow seeds directly or transplant seedlings in cool weather (early spring or late summer/fall) in rich, well-drained soil with partial sun.
- Keep soil consistently moist to prevent bolting.
Natural Pest Control
- For ginger, inspect regularly for spider mites, especially in dry conditions, and mist leaves with water.
- Protect young sweet potato plants from deer and rabbits with fencing or repellents.
- Use row covers to shield bok choy from cabbage worms and flea beetles, especially when plants are young.
Harvest
Ginger
- Harvest small pieces of rhizome by carefully digging around the plant after about 4-6 months, or wait 8-10 months for larger, more pungent roots when foliage starts to yellow.
Sweet Potato
- Dig up tubers when leaves and vines begin to yellow, typically 90-120 days after planting slips, before the first hard frost.
Bok Choy
- Harvest outer leaves for a cut-and-come-again approach, or cut the entire head at soil level when it reaches desired size, usually 30-45 days for baby bok choy or 45-60 days for mature heads.
Storing & Freezing
Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
