Meal-Prep Beef & Broccoli Boxes
Lean beef strips in a ginger-soy glaze with charred broccoli and rice: a takeaway-style prep box that reheats beautifully.

Ingredients
- 600g lean beef strips
- 3 tbsp soy sauce or tamari
- 1 tbsp honey
- 1 tbsp grated ginger
- 2 garlic cloves
- 2 heads broccoli, in florets
- 1½ cups brown rice (dry)
- 1 tbsp sesame oil
- Sesame seeds
Cooking Steps
Cook the rice; spread on a tray to cool quickly.
Marinate the beef in soy, honey, ginger and garlic 15 minutes.
Stir-fry the beef hot and fast; steam or roast the broccoli until just tender.
Build 5 boxes: rice, beef, broccoli, sesame seeds.
Cool fast, lid, refrigerate within 2 hours.
Optional Enhancements

Plant & Growing Tips
Broccoli
- Sow seeds in spring for a summer harvest or late summer for an autumn/winter crop in Asian climates, ensuring full sun.
- Plant in rich, well-drained soil and provide consistent moisture, spacing plants widely for good air circulation.
- Consider using row covers to protect young plants from early pests.
Ginger
- Plant rhizome pieces with visible 'eyes' facing up in warm, humid conditions, ideally in partial shade.

Garlic

Harvest
Broccoli
- Cut the central head when it is firm and tight, before the florets begin to open and show yellow, leaving the plant to produce side shoots.
Ginger
- Harvest small pieces from the side of the plant after 4-6 months, or dig up the entire plant when the leaves yellow and die back.
Garlic
- Dig up garlic when the bottom third of the leaves have turned yellow and dried, but several green leaves still remain, then cure in a dry, airy spot.
Storing & Freezing
Fridge 3–4 days airtight. Reheat piping hot; keep any extra sauce in a side pot so the broccoli stays green and firm.
