Summer Berry Shortcake

A light, fresh dessert — wholemeal-almond shortcakes layered with macerated berries and Greek yoghurt instead of sugary cake and whipped cream.

Ingredients

  • 2 cups strawberries, sliced
  • 1 cup blueberries
  • 1 tbsp maple syrup or honey
  • 1 tbsp lemon juice
  • 1 cup wholemeal flour
  • 1 cup almond flour
  • 1 tbsp baking powder
  • 2 tbsp cold coconut oil or butter
  • ¾ cup milk (or almond milk)
  • 1 tsp vanilla
  • 1 cup thick Greek yoghurt, to serve
  • Fresh mint

Method

    Preheat the oven to 190°C (375°F).

    Toss the berries with lemon juice and maple syrup; set aside to macerate.

    Rub the coconut oil into the wholemeal flour, almond flour and baking powder, then stir in milk and vanilla to a soft dough.

    Shape into 6 rounds and bake 15–18 minutes until golden.

    Split each shortcake and layer with Greek yoghurt and berries.

    Top with mint and serve.
