Peach Cobbler
A Southern favourite made light — juicy peaches under a wholemeal-oat batter, sweetened with a touch of maple instead of two cups of sugar.

Ingredients
- 4–6 peaches, sliced
- 1 tbsp maple syrup or honey
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1 cup wholemeal or oat flour
- 1 tsp baking powder
- 1 tbsp maple syrup
- ¾ cup milk (or almond milk)
- 2 tbsp olive oil or melted coconut oil
- 1 tsp vanilla
- Pinch of salt
Method

Preheat the oven to 180°C (350°F).

Toss the peaches with lemon juice, cinnamon and 1 tbsp maple syrup; spread in a baking dish.

Whisk the flour, baking powder and salt, then stir in milk, oil, vanilla and maple syrup to a loose batter.

Pour the batter over the peaches.

Bake 30–35 minutes until set and golden.

Serve warm with a spoon of Greek yoghurt.

- Almond milk + coconut oil for dairy-free
- Add oats to the batter for extra fibre

Fridge up to 3 days; reheat gently. Freezes up to 1 month.
