New Orleans Jambalaya (Garden Version)
A flavorful Southern dish combining peppers, tomatoes, onions, garlic, herbs, and rice.

Ingredients
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks
- 3 garlic cloves, minced
- 2 cups chopped tomatoes
- 1–2 cups chicken or vegetable stock
- 1 cup rice (long-grain)
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp oregano
- 1 bay leaf
- Salt & pepper
- Optional: sausage, chicken, shrimp, okra, cayenne
