Creamed Spinach
A rich, classic American side dish featuring homegrown spinach, garlic, and onions.

Ingredients
- 1–1.5 lbs fresh spinach
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 tbsp butter
- 1 tbsp flour
- 1 cup milk or cream
- Salt & pepper
- Optional: nutmeg, parmesan, cream cheese

Swaps & variations
- Low-dairy: use coconut milk

Storing & freezing
Refrigerate 3 days. Freeze up to 2 months (without dairy for best consistency).
