Welsh Rarebit
A British savoury toast topped with a rich cheese and mustard sauce.

Ingredients
- 200g mature cheddar, grated
- 1 tbsp butter
- 1 tbsp flour
- 100ml milk or ale
- 1 tsp mustard
- 1 tsp Worcestershire sauce
- 1 egg yolk
- 4 slices thick-cut bread
- Salt & pepper
Method

Melt butter, add flour, and whisk 1 minute

Add milk or ale gradually, stirring until smooth

Add cheese, mustard, Worcestershire sauce, salt, and pepper. Stir until melted

Remove from heat and beat in egg yolk

Toast bread lightly on both sides

Spread cheese mixture thickly over toast

Place under a hot grill for 2-3 minutes until bubbling and golden
Swaps & variations
- Add leeks sautéed in butter
- Add paprika or cayenne pepper
- Add chopped chives
- Add a splash of cream for richness
Storing & freezing
Best served immediately. Cheese mixture can be made ahead and refrigerated 2 days.
Grow it yourself
- Leeks: Sow indoors Feb-April. Plant out when pencil-thick. Water well during dry spells
- Herbs: Chives, parsley, and thyme grow well in pots. Trim regularly
- Leek moth: use mesh netting
- Slugs: copper tape or eggshell barriers
- Herbs: companion plant to deter aphids
- Leeks: Harvest when stems 2-3cm wide. Pull gently after loosening soil
- Herbs: Pick leaves regularly for continual production
