Baked Almond-Crusted Chicken Tenders

Crunchy, golden chicken tenders in an almond-and-herb crust, baked not fried — kid-friendly and high in protein.

Ingredients

  • 500g chicken breast, cut into strips
  • 1 egg, beaten
  • 1 cup almond flour
  • ¼ cup grated parmesan
  • 1 tsp paprika
  • Salt & pepper
  • Olive oil spray

Method

    Preheat the oven to 200°C (400°F).

    Dip the chicken strips in egg, then coat in the almond flour, parmesan and paprika.

    Lay on a lined tray and mist with olive oil.

    Bake 18–22 minutes, turning once, until golden and cooked through.

    Serve with a yogurt dip.

Swaps & variations

  • Wholemeal breadcrumbs instead of almond
  • Air-fry at 200°C for 12 minutes
  • Add cayenne for heat

Storing & freezing

Fridge up to 3 days; freeze cooked up to 2 months.
