Garlic-Butter Bliss Shrimp Plate
Savor juicy garlic-butter shrimp paired with crisp asparagus and golden baby potatoes, all cooked to perfection in your air fryer for a delightful weeknight meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 lb baby potatoes, halved
- 1 bunch asparagus, trimmed
- 1 tsp olive oil
- Salt and pepper to taste
- Lemon wedges for serving
- Chopped parsley for garnish

Preheat the air fryer to 200°C (400°F).

In a bowl, toss the halved baby potatoes with 1 tbsp of melted butter, salt, and pepper. Place them in the air fryer basket and cook for 15 minutes.

After 15 minutes, shake the basket to ensure even cooking, then add the asparagus to the basket alongside the potatoes. Cook for an additional 5 minutes.

While the vegetables are cooking, in another bowl, combine shrimp, remaining melted butter, minced garlic, salt, and pepper. Mix well to coat the shrimp.

After the 5 minutes are up, push the asparagus and potatoes to one side and add the garlic-butter shrimp to the other side of the basket. Cook for an additional 6 minutes, shaking halfway through.

Once done, let the shrimp rest for 2 minutes. Squeeze fresh lemon juice over all contents in the basket for added flavor.

To plate, arrange the shrimp on one side, the asparagus on the other, and fill the middle with the baby potatoes. Garnish with chopped parsley and serve with lemon wedges.

Storing & freezing
Store in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
