BBQ Bliss Chicken Plate

Succulent BBQ chicken paired with crispy red potatoes and tender broccoli, all cooked to perfection in the air fryer.

Ingredients

  • 4 chicken thighs, boneless and skinless
  • 1/4 cup BBQ sauce
  • 500g baby red potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 300g broccoli florets

Method

  1. 1

    1. Preheat the air fryer to 200°C (400°F).

  2. 2

    2. In a bowl, toss the halved baby red potatoes with olive oil, garlic powder, paprika, salt, and pepper.

  3. 3

    3. Place the seasoned potatoes in the air fryer basket and cook for 10 minutes, shaking the basket halfway through.

  4. 4

    4. While the potatoes are cooking, coat the chicken thighs with BBQ sauce, ensuring an even coverage.

  5. 5

    5. After the potatoes have cooked for 10 minutes, add the BBQ chicken thighs on top of the potatoes and cook for 10 minutes.

  6. 6

    6. After 10 minutes, add the broccoli florets around the chicken and potatoes, then cook for an additional 6 minutes.

  7. 7

    7. Once cooked, let the chicken rest for 5 minutes, then drizzle with additional BBQ sauce before serving. Plate the chicken with potatoes and broccoli.

Swaps & variations

  • 1. Swap chicken thighs for chicken breasts for a leaner option.
  • 2. Replace baby red potatoes with sweet potatoes for a sweeter flavor.
  • 3. Use store-bought teriyaki sauce instead of BBQ sauce for a different twist.

Storing & freezing

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
