Air-Fryer Sesame-Ginger Salmon Delight

A vibrant and healthy dish featuring tender sesame-ginger salmon, paired with sautéed bok choy and roasted sweet potato for a deliciously balanced dinner.

Ingredients

  • 2 salmon fillets
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 1 tablespoon honey
  • 1 sweet potato, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups bok choy, chopped
  • Fresh sesame seeds for garnish

Method

    Preheat air fryer to 200°C (400°F).

    In a bowl, mix soy sauce, sesame oil, grated ginger, and honey; marinate salmon fillets for at least 5 minutes.

    Toss sweet potato wedges with olive oil and salt, then place them in the air fryer basket and cook for 15 minutes, shaking halfway at the 7-minute mark.

    After 15 minutes, add the marinaded salmon fillets to the side of the sweet potatoes in the same basket. Cook for an additional 10 minutes, flipping the salmon halfway through at the 5-minute mark.

    While the salmon and sweet potatoes cook, quickly stir-fry the bok choy in a separate pan on the stovetop with a splash of water for 2-3 minutes until just wilted; season lightly with salt if desired.

    Once the air fryer timer goes off, remove the salmon and sweet potatoes and let the salmon rest for 2 minutes.

    Plate the salmon on a bed of sautéed bok choy, add sweet potato wedges on the side, and sprinkle with fresh sesame seeds for garnish.

  • Replace salmon with chicken breast or tofu for a different protein.
  • Use zucchini or broccoli instead of bok choy.
  • Swap sweet potatoes for regular potatoes or quinoa.

Storing & freezing

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 180°C (350°F) for 5-7 minutes.
