Cajun Zest Salmon Bowl

A vibrant plate of perfectly seasoned Cajun salmon nestled with buttery corn and crisp green beans, served alongside golden roasted baby potatoes for a hearty dinner.

Ingredients

  • 2 salmon fillets, skin-on
  • 200g green beans, trimmed
  • 1 cup corn kernels, fresh or frozen
  • 300g baby potatoes, halved
  • 2 tbsp Cajun spice blend
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges

Method

    1. Preheat the air fryer to 200°C (400°F).

    2. In a mixing bowl, toss halved baby potatoes with 1 tbsp olive oil and a pinch of salt; place them in the air fryer basket for 12 minutes.

    3. After 12 minutes, add the seasoned salmon fillets (rubbed with remaining olive oil and Cajun spice), skin-side down, and cook for an additional 8 minutes; gently shake the basket halfway through.

    4. After the salmon has cooked for 4 minutes, add the green beans and corn to the basket; close and continue cooking all ingredients for the remaining 4 minutes.

    5. Once the air fryer beeps, check the salmon for doneness; it should flake easily with a fork. If necessary, add 1-2 more minutes for extra cooking.

    6. Let the salmon rest for 2-3 minutes outside the air fryer, while the vegetables remain warm in the basket.

    7. To plate, arrange baby potatoes on one side, top the potatoes with green beans and corn, then place the rested salmon on top. Serve with fresh lemon wedges for squeezing over the dish.

Storing & freezing

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 160°C (320°F) for about 4-5 minutes.
