Cajun Sausage and Vegetable Medley
A vibrant, flavorful dinner featuring spicy Cajun sausage paired with roasted peppers and crispy baby potatoes, all cooked to perfection in the air fryer.
Ingredients
- 250g Cajun sausage, sliced
- 300g baby potatoes, halved
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish

In a mixing bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper.

Place the seasoned potatoes in the air fryer basket and cook for 15 minutes, shaking halfway through.

While the potatoes are cooking, toss the sliced Cajun sausage, bell peppers, and onion with the remaining olive oil, salt, and pepper in a separate bowl.

After 15 minutes, add the sausage and vegetable mixture to the air fryer basket with the potatoes; shake to combine.

Cook everything together for an additional 10 minutes, shaking the basket at the 5-minute mark for even cooking.
