Chicken Thighs with Creamy Mushroom Sauce

Ingredients

  • 2 chicken thighs (skin-on)
  • 1/2 cup mushrooms, sliced
  • 2 tbsp heavy cream or coconut cream
  • 1 tbsp olive oil
  • 1 garlic clove
  • Salt & pepper

Method

    Sear chicken thighs skin-side down until crispy, then flip and cook through.

    Remove from pan, sauté garlic and mushrooms.

    Stir in cream, simmer to thicken.

    Return chicken to pan and coat with sauce.
