Island Spice Jerk Chicken with Honey-Glazed Plantains and Roasted Peppers

A vibrant, flavorful air-fryer meal featuring succulent jerk chicken paired with sweet plantains and colorful roasted peppers, capturing the essence of Caribbean cuisine in every bite.

Ingredients

  • 4 chicken thighs (boneless, skinless) marinated in jerk seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 ripe plantains, peeled and sliced into diagonal pieces
  • 500g baby potatoes, halved
  • 2 tbsp honey
  • 1 tbsp olive oil
  • salt and pepper to taste
  • fresh lime juice for garnish

Method

    Preheat the air fryer to 200°C (400°F).

    Place the halved baby potatoes in the air fryer basket, drizzle with olive oil, salt, and pepper. Cook for 10 minutes.

    While the potatoes are cooking, prepare the chicken thighs. Season them with jerk marinade and set aside for a minute.

    After 10 minutes, add the marinated chicken thighs to the basket with potatoes. Cook for an additional 15 minutes, flipping the chicken halfway through the cook time at 7 minutes.

    After 15 minutes, carefully add the sliced peppers to the basket with the potatoes and chicken, and cook for another 6 minutes until everything is cooked through and the chicken reaches an internal temperature of 75°C (165°F).

    In the last 5 minutes of cooking, add the sliced plantains to the basket, allowing them to caramelize in the air fryer with the rest of the ingredients, and drizzle honey over them 2 minutes before they finish cooking.

    Once done, let the chicken rest for 5 minutes before slicing.

    Plate the chicken alongside the roasted peppers and honey-glazed plantains, drizzling a bit of fresh lime juice over the chicken for an extra zing.
