Mediterranean Bliss Chicken Bowl
A vibrant air-fried medley of succulent Mediterranean chicken topped with tangy feta, briny olives, and roasted cherry tomatoes served alongside crispy baby potatoes for a wholesome dinner experience.
Ingredients
- 500g chicken breast, cubed
- 250g baby potatoes, halved
- 100g cherry tomatoes
- 50g feta cheese, crumbled
- 75g pitted olives, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish

Preheat the air fryer to 200°C (400°F).

In a bowl, toss the halved baby potatoes with 1 tbsp olive oil, salt, pepper, and half the oregano. Place them in the air fryer basket and cook for 10 minutes.

While the potatoes are cooking, season the cubed chicken with the remaining olive oil, garlic powder, oregano, salt, and pepper. After the 10 minutes, shake the potato basket and add the chicken on top of the potatoes. Cook for an additional 10 minutes.

After 10 minutes, gently shake the basket again and add the cherry tomatoes on top of the chicken and potatoes. Cook for 5 more minutes.

In the last 5 minutes of cooking, add the olives to the basket.

Once done, carefully remove the basket and let the chicken rest for 5 minutes.

Plate the dish by arranging the chicken, potatoes, cherry tomatoes, and olives. Sprinkle crumbled feta on top and garnish with fresh parsley.
Swaps & variations
- Chicken breast can be swapped for chickpeas for a vegetarian option.
- Feta can be replaced with goat cheese for a different flavor.
- Olives can be omitted or replaced with capers for a saltier kick.
Storing & freezing
Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for best results.
