New England Clam Chowder (Garden Version)

A homestead-friendly twist on the coastal classic, featuring garden-grown potatoes, onions, and celery.

Ingredients

  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2–3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 3–4 medium potatoes, diced
  • 2 cups vegetable or chicken stock
  • 1 cup milk or cream
  • 1–2 bay leaves
  • 1 tsp dried or fresh thyme
  • Salt & pepper
  • Optional: canned clams, smoked paprika, corn kernels, bacon, fresh parsley
