Ingredients

  • 1 medium eggplant
  • 1/2 cup sugar-free tomato sauce
  • 1/2 cup shredded mozzarella
  • 1 tbsp olive oil
  • Basil (fresh or dried)

Method

    Slice eggplant into rounds and brush with oil.
