Welsh Rarebit

A British savoury toast topped with a rich cheese and mustard sauce.

Ingredients

  • 200g mature cheddar, grated
  • 1 tbsp butter
  • 1 tbsp flour
  • 100ml milk or ale
  • 1 tsp mustard
  • 1 tsp Worcestershire sauce
  • 1 egg yolk
  • 4 slices thick-cut bread
  • Salt & pepper

Method

    Melt butter, add flour, and whisk 1 minute

    Add milk or ale gradually, stirring until smooth

  3. 3

    Add cheese, mustard, Worcestershire sauce, salt, and pepper. Stir until melted

    Remove from heat and beat in egg yolk

    Toast bread lightly on both sides

  6. 6

    Spread cheese mixture thickly over toast

  7. 7

    Place under a hot grill for 2-3 minutes until bubbling and golden

Swaps & variations

  • Add leeks sautéed in butter
  • Add paprika or cayenne pepper
  • Add chopped chives
  • Add a splash of cream for richness

Storing & freezing

Best served immediately. Cheese mixture can be made ahead and refrigerated 2 days.

Grow it yourself

  • Leeks: Sow indoors Feb-April. Plant out when pencil-thick. Water well during dry spells
  • Herbs: Chives, parsley, and thyme grow well in pots. Trim regularly
  • Leek moth: use mesh netting
  • Slugs: copper tape or eggshell barriers
  • Herbs: companion plant to deter aphids
  • Leeks: Harvest when stems 2-3cm wide. Pull gently after loosening soil
  • Herbs: Pick leaves regularly for continual production
